‘Araban Sarımsağı’ is a garlic with white bulb skin and cloves skin color and cream-yellow gum color. It belongs to the genus Allium Sativum L. The bulb of ‘Araban Sarımsağı’, which is an early growing garlic due to the climate and growing conditions, is oval in cross section and elliptical in longitudinal section. There are strips on the bulb skin and clove.
The number of ‘Araban Sarımsağı’ cloves in each bulb is approximately 10 to 15. Average clove weight is 4 to 7 g and average length is 1 to 3 cm. The number of protective skins in each bulb of garlic is between 5 to 10 pieces. While the amount of selenium is 0,884-2,333 micrograms in normal garlic, it is 1,622-2,864 micrograms in ‘Araban Sarımsağı’.
It is the sulphurous essential oil, that is, the allinase enzyme, which gives garlic its special smell and flavor. ‘Araban Sarımsağı’ contains an average of 0,4 % sulphurous essential oil.
Although the bulb weight can reach up to 100 g depending on the growing conditions, the average weight is between 40 to 60 g. The bulb diameter is between 80 to 150 mm. It is easily separated from the skin. The dry matter ratio is in the range of 32 % to 42 %. The average storage period is minimum 5, maximum 10 months.

4. Concise definition of the geographical area
The demarcated geographical area covers all the villages and towns belonging to the Araban district in Gaziantep province in Southeastern Anatolia region.

Specificity of the geographical area
Araban is located on the Araban Plain, which is 250 km2 wide, in the northeast of Gaziantep province, and it took its name from this plain. The district, which is 67 km away from Gaziantep, is at an altitude of 610 m from the sea. Its area is 534 km2. Average annual precipitation is 559 mm/m2
Soil requirements
‘Araban Sarımsağı’ grows in light alluvial soils rich in nutrients and organic matter. In the region, the soil pH value is generally between 6,5-7, and the humus ratio is between 7-10 %. The crop is planted in October-November and the plant resistance is high because it spends the winter in the soil. Harvest is done in May.
Specificity of the product
‘Araban Sarımsağı’ is a garlic variety belonging to the early harvested Allium Sativum L. species, which grows only in the Araban Plain, is large, the color of the head and the shell is white, the gingiva is cream-yellow, the dry matter content and selenium content are high.
Causal link
Araban Plain has clay loam soils with high humus content. The climacteric structure and soil structure of the region are effective in the formation of unique features such as taste and aroma, together with the type of product. Due to the climatic characteristics of the region, it is planted before winter and in October-November. The plant spends the winter in the soil and meets the need for adequate and necessary cooling, which increases the durability of the product. It shows a rapid and balanced growth period from February and March and can be introduced to the market as an early product after being harvested in May.
